Easy Vegan Alkaline Spelt Bread Recipe (with Just 4 Ingredients)

If you’re following a vegan and/or alkaline diet, you can still enjoy the amazing deliciousness of bread – with a few adjustments to knock out inflammation and balance those pH levels. 

Based on Dr. Sebi’s food list, alkaline bread has a pretty simple recipe which uses whole grains – the main ingredient being spelt- without the acidic nature of yeast. This is a great way to nourish your body and enjoy homemade bread too. 

Plus, this specific alkaline bread recipe uses 4 simple ingredients, which doesn’t include avocado oil, almond milk, or even baking soda. gasp!

Which means you won’t need to gather a bunch of supplies – so roll up your sleeves and get straight into some easy deliciousness.

Alkaline Bread Ingredients

  • 4 cups sprouted grain whole spelt flour
  • ¼ cup 100% pure agave nectar
  • 2 teaspoons pure sea salt (Celtic sea salt is perfect for this)
  • 2 cups sparkling water (Perrier is a great option for this)
  • Sesame seeds (optional)

Alkaline Bread mixing Steps

First you’ll want to combine all the dry ingredients. For this recipe, we’ll be using a stand mixer with a dough hook attachment, but if you want to do this manually with a bowl and your hands, go for it. 

In a large bowl, combine flour with sea salt at medium speed. 

Now, it’s time to add in the wet ingredients. While the mixer is still going, add in agave. 

To help keep your dough from sticking to the dough hook, brush on a bit of oil like grape-seed or canola oil on the hook to help unstick the dough as it mixes.

While the mixer is still going, add in the sparkling water, 1 cup at a time. 

Once that is mixed in, be sure to stop the mixer and scrape the sides of the bowl. Then, let your mixer knead the dough for 5 minutes at medium speed. If you notice your dough is a bit too sticky, just sprinkle in a bit of spelt flour and continue mixing.

Next, prepare a greased loaf pan by coating the bottom and sides with grape-seed oil and spelt flour. Then transfer your dough into the pan, making sure to press any air bubbles out as you do so.  If you want to skip flouring the pan, you can instead use parchment paper to line the loaf pan.

baker’s tip: to handle the dough with your hands, be sure to coat your hands with a bit of oil.

One great idea for more deliciousness is adding sesame seeds, herbs or even walnuts onto the top of the loaf for a nutty flavor. 

Then, cover your pan with aluminum foil or tea towel and let sit for a rise time of one hour.

While you’re waiting, preheat the oven to 350 degrees Fahrenheit.

After your dough has sat for one hour, remove the cover. You’ll notice it has risen just a bit (thanks to the sparkling water bubbles). 

Place your loaf pan into your oven on the medium oven rack for 50 minutes to 1 hour, or until a nice crust has formed with a slight brown color. Remove from the oven and let cool on a wire rack.

Once cooled, remove your bread from the pan. Using a bread knife, cut your fresh alkaline bread – you’ll notice the crumb is very similar to that of sandwich bread.

Now, enjoy your scrumptious yeast-free spelt bread with some olive oil, with lettuce and avocado for a wicked alkaline-rich sandwich, make it into avocado toast, or nom as-is.
