Based on Dr. Sebi’s food list, this alkaline bread simple recipe utilizes whole grains (the main ingredient being spelt), and is a great way to nourish your body and enjoy bread too. Plus, you can eat it in about 30 minutes start to finish without all the rise time. #heckyes
Alkaline spelt Flat Bread Ingredients
- 2 cups sprouted grain Spelt flour
- 2 tablespoons grapeseed oil (or avocado oil)
- 2 teaspoons Basil leaves
- 2 teaspoons Onion powder
- 1.5 teaspoons sea salt (Celtic sea salt is perfect for this)
- ¼ teaspoon (even less) Cayenne pepper
- 2 teaspoons Oregano
- ¾ cup sparkling water (Perrier is a great option for this)
Alkaline Flat Bread Mixing Steps
First you’ll want to combine all the dry ingredients first.
In a large bowl, combine flour, basil leaves, onion powder, seal salt and cayenne pepper.
In a separate bowl or cup, mix together the sparkling water and grapeseed oil.
Yep, oil does not mix with water, so be sure to mix this a bit with a fork or whisk to get everything combined to the best of your ability.
Now, if you want to use a mixer with a dough hook attachment for this next step, just transition your dry ingredients to your stand mixer bowl and proceed with the steps. Otherwise, you’ll just use your two hands to do a bit of kneading and mixing work.
Slowly add in the wet ingredients into the dry ingredients making sure to mix as you are doing it. The goal is to keep mixing until you form a ball. If you’re using a stand-mixer, set it to medium speed.
Once everything has been mixed, begin to roll and knead your bread for 5 minutes straight. If your dough is sticky, just sprinkle a bit more spelt flour onto the surface and continue kneading.
Once the bread has been kneaded, roll out the dough onto a clean, lightly floured surface and section your bread out into 4-6 pieces, depending on how big you want the pieces to come out. Roll each of the pieces into a ball and then flatten each with a roller to about ⅛” thickness.

Place your flattened dough on a heated skillet or cast iron pan at medium heat without any oil or greasing agent. Let cook for 1.5-2 minutes or until one side has browned into a nice crust. Flip over and let cook on the other side until the top of the loaf has browned, about 1-2minutes.
Nice and slow is the way to go here.
Remove your bread from the skillet and let cool on a wire rack for a few minutes. Then break apart and enjoy with some olive oil, double up with lettuce and avocado for some wicked sandwich bread, avocado toast, or as-is.
