  • 3 cups of lukewarm water (about 100 degree Farenhiet)
  • 2 Tbsp active dry yeast
  • 1.5 Tbsp sea salt
  • 6.5 cups of all-purpose flour (or combination of all-purpose with whole wheat flour)

Dough recipe

  1. In a large container, combine lukewarm water and active dry yeast with a whisk.
  2. Add in salt and flour and stir until all ingredients are properly combined. Use a wooden spoon or your hands to stir the ingredients until a wet dough forms. The mixing process should take no more than five minutes, thanks to the no-knead method.
  3. Let it Rest: Once the dough is mixed, cover the bowl with plastic wrap and let it rest at room temperature for 2 hours. During this time, the yeast will work its magic, causing the dough to rise and develop a wonderful flavor. This initial rise period allows the gluten in the dough to develop, resulting in a light and airy texture.
  4. Store it Away: After the resting time, transfer your dough to the refrigerator, where it can stay for up to 2 weeks. Allow it to rest until an hour and a half prior to your planned meal.

Bread recipe

  1. Remove a portion of dough (about the size of a grapefruit) and place inside a well-floured banneton or surface.
  2. Gently stretch the sides of the dough, folding it onto itself to form a tight ball, and place into your banneton.
  3. Cover with a towel and let rise for 30-40 minutes.
  4. Preheat your oven to 425°F and place a dutch oven inside to preheat for about 20 minutes. If you don’t have a dutch oven, using a pizza stone or baking sheet will also do just fine. Once the oven is hot, carefully transfer the dough onto the heated surface and let it bake for around 30-35 minutes, or until the crust turns golden brown.
  5. Flip your dough onto parchment paper, carefully remove the dutch oven from the oven, lift the parchment paper, and gently lower the dough with the parchment paper into the dutch oven.
  6. Cover with the lid, place back into the oven and bake for 30 minutes. Remove lid and continue baking for 3-5 minutes until bread is about golden brown on top.
  7. Remove from oven and carefully transfer bread to a cooling rack for a few minutes before slicing. Enjoy!

What I love most about this recipe is that it requires very little hands-on time. In fact, the longest part is waiting for the bread to finish baking. Once you’ve combined the ingredients and let it sit for a bit, store it away and only use it once you’re ready to pop it in the oven.
